Ganache Glazed Cake

Remember the story about my past birthday cakes?


Well, this year I was delighted that Charlotte pulled up a stool and helped me bake the cake. I genuinely figure by teaching her how to bake cakes she will be able to bake my birthday cakes in the future. I know, shameless.

Anyway, this particular cake was a basic yellow cake with the rich addition of buttermilk. The icing was ganache and since it was such a simple and delicious icing I wanted to share the recipe in case you have never tried it.

Easy Ganache Glaze Icing

1 12 oz. package, plus 1 cup (roughly 3 cups) of semisweet chocolate chips
1 1/2 cups heavy cream
1 Tablespoon butter
A pinch of salt

Place the chips in a medium bowl. In a medium saucepan bring the cream just to a boil. Pour over chips, add butter and salt. Whisk until the chips are melted and the glaze is shiny and spreadable. Cool until barely warm before placing on the cooled cake.

If your glaze is not thick enough to your liking, you may add another layer. But first place your glazed cake in the refrigerator until cool and then spread on the second layer.
